The Perfect Chocolate Cake

Every now and then you find the perfect recipe that always impresses which makes you look like a great cook (unlike some macaron recipes ;-P)

In a microwave bowl, add:
  • 1 large cup of water
  • 1& 1/2 cups of white sugar
  • 1/2 block of butter or margarine (chopped)
  • 3 tablespoons of cocoa (heaped)
Microwave all ingredients for 2 minutes. Let cool and add:
  • 2 eggs (lightly whisked)
  • 1 & 1/2 cups of Self Raising Flour (don't bother sifting – yay!)
Mix, pour into greased, floured & lined round tin and bake in moderate oven for 45 minutes.

Now I don't have a perfect chocolate icing, but do you? Please share it.

  1. Yum it looks so easy. I'll have to try it.

I love chocolate ganache for icing. My favourite is melt 300 grams of dark chocolate and mix with 300 grams of sour cream in a double boiler. Once combined, let it cool so it thickens (but not completely cool) and then spread it on.

This does make a huge quantity of ganache, so you could halve the quantity. Or you could use half on the cake and eat the rest from the bowl. Yummmmm

  2. It's good to be doubly sure, of course!

Speaking of which,if this never-fail recipe does fail, as a back-up plan this cake is also delicious with ice-cream and Orange Chocolate Sauce...
Melt 1 oz of copha then 1/2 block of cooking chocolate, grated rind of one orange, and 1/2 cup of freshly squeezed orange juice. You can also bottle this as gift. Xx
